food by Kristin Danley 8/1/2016
For a really easy and wonderfully fast recipe to prepare for your family, check out this chicken and rice casserole from Nicko's Kitchen. It only requires five ingredients and is quick to fix. You can even modify it by adding in your favorite vegetables.
What You'll Need
For this recipe, you'll need the following ingredients:
2 boneless, skinless chicken breasts, sliced thinly
1 cup white rice, uncooked
1 can of cream of celery soup
1 packet of french onion soup mix
2 onions roughly chopped
water
salt and pepper to taste
Ready The Rice
First, pour one cup of the uncooked white rice in a glass casserole dish. Be sure to spread it around, up to the edges of the dish. Meanwhile, preheat your oven to 320 degrees.
Add The Chicken
Now arrange the chicken breasts side by side across the bed of rice. Be sure to stretch them out from one end of the casserole dish to the other. Try not to overlap them too much.
Soup And Soup Mixes
Now mix together the two soups in a separate bowl. Use the empty soup can and fill it with water, then add that water to the soup, stirring thoroughly. Next, sprinkle salt and pepper into the soup mixture.
Add The Soup Mixture
Take the thoroughly blended soup mixture and slowly pour it over the chicken and rice. Be sure to cover all of the chicken breasts and rice. You're almost done!
Add The Onions
Now take the two roughly chopped onions and scatter them across the top of the chicken and rice casserole. Try to submerge them under the soup, so the exposed areas do not overcook. Then pop the casserole into the oven and cook at 320 degrees for two hours.
Now Indulge!
While your casserole is cooking, you'll be amazed at the smells in your kitchen. Once it's done, you'll delight in how delicious it is. Serve it while it's warm, but it's also great reheated as leftovers.
