Juggling a career, the house cleaning, errands, and caring for children - it's a wonder we have time to breathe let alone make dinner. Well, this tasty chicken pot pie recipe is simple to prepare and certain to leave empty plates and satisfied bellies!
Calling All Ingredients
This quick and easy meal requires a handful of ingredients:
- 4 lbs boneless skinless chicken
- 12 oz bag frozen mixed vegetables (fresh veggies work too!)
- 2 cans peeled potatoes
- 4 cups chicken broth
- 1 cup flour
- 1 stick butter
- 1 can refrigerated biscuits
- onion powder, garlic powder, paprika, salt, and pepper
Next, add in the cup of flour and follow with the four cups of chicken broth. Use a whisk to evenly combine the ingredients, stirring the mixture continuously for approximately 5 minutes. You should notice the liquid beginning to thicken. Remove the sauce from the heat.
Drain your cans of peeled potatoes, cut into bite-size pieces, and combine into your colorful concoction. Give everything a final stir, and cover. Set your slow cooker on high and allow to cook for approximately 3 hours. Here's where you fit in some "you" time!
Once everything has cooked through you'll want to cut the chicken into smaller pieces. You can attempt to do this in the slow cooker, however it might be easier to pull the chicken out first and do this on a plate. Just be sure to add it back in once you've finished!
Cover the top of your chicken pot pie "filling" with a layer of biscuits. Be sure to save any additional ones for those who come back for a second helping - because they'll surely be returning for more of this deliciousness!
The moment your family has been waiting for and the moment you've worked "so hard" for... chicken pot pie time! You're guaranteed to receive a few compliments on this simple, all-in-one, yummy meal. And for all you do every day... you deserve each and every "thank you!"
